Perfect Mashed Potatoes
With olive oil
Select a premium potato for mashing (lower starch not too dry)
1 kg potatoes
Salt to taste
Ground black pepper
Clackline Valley Extra Virgin Olive Oil
You will need a potato masher
Serves: 4 to 6 people
You may choose to peel the potatoes or leave the skin on.
Cut the potatoes into 1cm thick slices.
Put potatoes into a saucepan.
Add 1/2 teaspoon salt.
Add water until potatoes are covered.
Bring to boil, reduce heat and simmer, covered for 15-20 minutes.
They are done when a fork can easily be poked through them.
Drain water from potatoes.
Put hot potatoes into a bowl.
Add 2 tablespoons olive oil.
Use potato masher to mash potatoes until well mashed.
Use a strong spoon to beat further, adding more olive oil to achieve the consistency you desire.
Do not over-beat the mixture or your potatoes will get gluey.
Add more salt and pepper to taste.
Garnish with fresh herbs.
